VEGETABLES TO MAINTAIN GOOD HEALTH
Vegetables are important part of healthy eating
and provide a source of many nutrients. Research suggests that healthy nutrition radically
improves Student's cognitive function and hence helpful in academic
achievements. Specific vitamins and minerals that our body obtains from
nutrient-rich foods play a critical role in the growth & development of
brain and learning. Today we are going to know some important vegetables which
are very rich in minerals and healthy for the body.
A. Green leafy vegetables: Green leafy vegetables are rich in calcium, iron
and vitamins. Calcium is good for the bones and teeth. Iron helps in blood
formation. Vitamins protect us from many diseases like blindness, bleeding
gums, skin rashes etc. Some of the leafy vegetables rich in vitamins and
nutrients are:
1.Amaranth
2.Spinach
3.Cabbage
4.Fenugreek
5.Mustard.
B. Roots and tubers: Most of the tubers
are starchy or energy giving foods. It replaces
a part of cereals in our diet as they are equally rich in carbohydrates. Some
roots and tubers also contain calcium and vitamins. Some of the energy giving
roots and tubers are:
1.Potatoes and Sweet
potatoes(rich in carbohydrates. POTATOES also provide vitamin C)
2.Yam : It is a good
source of calcium.
3.Carrot: Carrot is a good source of vitamin A.
C. Other vegetables : Some
other vegetables which are rich source
of vitamins and minerals are.
1. Brinjals: Fibre and antioxidants are the two of the nutrients that
make brinjal a food that prevents cancer, helps weight loss and also useful in
heart diseases.
2. Peas : Green peas are a rich source
of many minerals such as calcium, iron, copper, zinc, and manganese. It
enhances our immunity system and also helpful in anti-aging of the skin.
3. Beans : Beans are high in antioxidants, fiber, protein, B vitamins, iron,
magnesium, potassium, copper and zinc. Beans ensure better heart health,
prevent some types of cancer and also prevent fatty liver.
4. Different types of
gourds: Gourds are rich in dietary fibre. Gourd cools our body and helps in weight loss. They are also useful in
treating urinary tract infections, keeping our heart healthy and relieving stress.
5. Lady's finger : The fibers of Lady’s finger helps the process
of digestion in the body by facilitating proper bowel movement. It also serves
as a supplement for folic acid. It is also a good source of vitamin C, A &
K. As such it’s consumption improves the
immunity system.
6. Drumsticks: DRUMSTICKS are rich in calcium and vitamin C.
Drumsticks helps in
regulating blood sugar levels, purifying bloods and also relieving respiratory
disorders.
